Meet Our Board Members
Jeremy is president and owner of Occasions Catering, where his hands-on understanding of waste in the hospitality industry led to his active involvement with We Don’t Waste. Prior to purchasing Occasions, Jeremy worked in politics and the technology industry. After earning his political science degree from Brown University, he began his career working in the United States Senate, then worked for the Governor of Colorado and Mayor of Denver. He also holds an MBA from the University of Colorado, Denver. Jeremy and his wife, Kristin, are active in the Denver community and are proud parents of two daughters. Jeremy previously served as Vice-President of the Board.
Sarah Spelts Loebl
Sarah is a valuation expert and the founder of Valuation Analytics, a firm that specializes in providing business valuation and litigation support. Sarah holds degrees in economics and business administration from Hastings College and a Certificate in Graduate Finance from CSU. Sarah is President of the Colorado/Wyoming Chapter of the National Association of Certified Valuators and Analysts and is Treasurer for the Colorado LGBT Bar Association. Sarah is a passionate supporter of We Don’t Waste because its mission is a smart and efficient way to address two major problems simultaneously – hunger, and the environmental impact of food waste.
Kevin Preblud is a third generation Denver native, a graduate of the University of Colorado School of Business, and a proud father of two children. Kevin is the President of Service Solutions, a local commercial cleaning company that services clients in education, commercial, multi-family and residential facilities. We Don’t Waste is the latest non-profit endeavor for Kevin, he has over twenty years of non-profit involvement with the Cherry Creek Arts Festival, Graland Country Day School and various other local non-profits. Kevin has previously served as President of the Board and as Treasurer.
Ms. Begal holds a Master of Business Administration – Finance Concentration from The University of Texas – McCombs School of Business and a Bachelor of Science in Business Administration from the University of Lima (Lima, Peru). She is fluent in Spanish and English. Jimena is currently the Director, Sr. Vice President – Government and Institutional Group, with BBVA Compass Bank and will work with We Don’t Waste in analyzing the financial sustainability of the organization to maintain and promote its mission.
Larry Di Pasquale
Larry DiPasquale founded Epicurean Group in 1981. As CEO and Chairman, his vision has forged new directions for Epicurean Group with expansive concepts of restaurants, sports hospitality, and cultural facilities. DiPasquale’s career and understanding of hospitality began in a variety of service and culinary industry roles. During the last 35 years, he has been an innovator in the art of catering and an advocate for “giving back” to the community that has supported him. Larry’s involvement with We Don’t Waste fits perfectly with his passion for feeding the underserved, eliminating waste, and educating future food service professionals.
Jeff founded Hermanson, Inc. (the parent company to Larimer Associates) in 1993, which has since grown to include the purchase of Larimer Square, a full city block of Downtown Denver. Additionally, he has partnered with many of Denver’s most notable chefs and restaurateurs to create some of the city’s most acclaimed restaurants. In addition to his work with We Don’t Waste, Jeff supports several other charities including Bassett Rescue, The Denver Dumb Friends League, The Crested Butte Land Trust, and the Crested Butte Center for the Arts.
Elaine brings a wide variety of experiences to the Board as a Lecturer at the Department of War Studies, King’s College London, University of London. Her research and teaching activities included national security, foreign policy, and oil politics in the former Soviet Union. Elaine has also served on the Fill a Plate for Hunger Committee in addition to providing the script for our most recent video presentation. She brings considerable experience in providing critical thought to We Don’t Waste’s strategic planning.
Bruce received his Juris Doctor from the University of Denver in 1984 and studied Mineral Economics at the Colorado School of Mines. Bruce is the Vice President and General Counsel of Royal Gold Inc., a precious metals royalty company. Dedicated to the public good, Bruce works with We Don’t Waste to improve the cycle of food in the Denver area. Bruce previously served as President of the Board.
Jackson has been active in the food service community in Denver for over 30 years and is an associate professor of hospitality at Metropolitan State University of Denver. He believes that We Don’t Waste is a truly efficient model that successfully distributes over-produced food from area food service providers to those individuals and organizations that need it, our neighbors that are living at or below the poverty level.
Michael is a Denver resident and a co-founder of IT services company NIMBL. As NIMBL’s Chief Innovation Officer Michael is responsible for driving NIMBL’s technologists to be SAP eco-system thought-leaders. Driving technology strategy, practice development/cultivation, and market positioning, Michael is ultimately responsible for where NIMBL is to provide the most value to its customers. Michael is personally committed to reducing greenhouse gases and reduction of food insecurity – both of which are the result of We Don’t Wastes’ mission.
Michael is a graduate of Colorado College and the University of Colorado School of Law. Michael currently is Vice President, General Counsel & Secretary for DCP Midstream Partners, LP. He contributes substantial time and energy to numerous social action organizations. He has volunteered with We Don’t Waste over the last five years and brings considerable expertise in analyzing financial documents and legal issues.
